Weight Watchers Points = 6 per serving
(excluding optional ingredients)
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 1/2 cup cold water
- 4 cups fresh blueberries, divided
- 2 tablespoons unsalted butter
- 1 tablespoon grated lemon zest
- 2 tablespoons fresh lemon juice
- 1 baked pie shell
- whipped cream (optional)
In saucepan, mix sugar, cornstarch, cinnamon, and salt; stir in cold water; add 2 cups of blueberries. Cook over medium heat, stirring constantly, until mixture is thick. Add butter, lemon zest and lemon juice.
Put remaining 2 cups of blueberries in pie shell. Cover with cooked berry mixture. Cool completely.
Serve topped with whipped cream, if desired.
