Ingredients

  • 3/4

    cup sugar

  • 3

    tablespoons cornstarch

  • 1/4

    teaspoon cinnamon

  • 1/8

    teaspoon salt

  • 1/2

    cup cold water

  • 4

    cups fresh blueberries, divided

  • 2

    tablespoons unsalted butter

  • 1

    tablespoon grated lemon zest

  • 2

    tablespoons fresh lemon juice

  • 1

    baked pie shell

  • whipped cream (optional)

Directions

In saucepan, mix sugar, cornstarch, cinnamon, and salt; stir in cold water; add 2 cups of blueberries. Cook over medium heat, stirring constantly, until mixture is thick. Add butter, lemon zest and lemon juice. Put remaining 2 cups of blueberries in pie shell. Cover with cooked berry mixture. Cool completely. Serve topped with whipped cream, if desired.
