Baked Rice Pudding II

Ingredients

  • 3 eggs
  • 1/3 c sugar
  • 1/4 t salt
  • 2 c milk
  • 2 c cooked rice
  • 1/2 c golden raisins
  • grated peel of 1 lemon
  • warm lemon sauce below
  • Warm lemon sauce
  • 1/3 c sugar
  • 2 T cornstarch
  • 1/8 t salt
  • dash nutmeg (optional)
  • 3/4 c water
  • grated peel of 1 lemon
  • juice of 1 lemon
  • 1 T butter or margarine
  • few drops yellow food coloring (optional)

Preparation

Step 1

In bowl, beat eggs slightly with sugar and salt. Stir in milk, rice, raisins and lemon peel. Pour into well buttered 1 qt casserole. Bake uncovered at 325 50 to 60 minutes or until set. Serve with lemon sauce below.

In small saucepan combine sugar, cornstarch, salt and nutmeg. Gradually blend in water, lemon peel and juice. Add butter. Cook over med heat stirring until thickened. Stir in food coloring. Serve warm.
