  • 10 large eggs separated
  • 1 1/4 cup sugar
  • 3/4 cup matzoh cake flour
  • 1/4 cup potato starch
  • juice of 1/2 lemon
  • juice of 1/2 orange (make sure combined total of juices is between 1/2 and 3/4 cup)
  • rind of each



Step 1

Mix flour, potato starch and a pinch of salt and sift 3 times.
Beat egg whites until stiff with pinch of salt. Set aside
Beat yolks and gradually add sugar til thick and lemon colored. Add juices and blend.
Fold in flour mixture gradually. Add rind by hand. Fold whites into mixture.
Put into a pan with center hold. Do not grease pan.
325 1 hour.
Invert cake and let stand 1 hour.
