corn & black bean salad

Ingredients

  • 2 Ears of Corn, husked and cleaned
  • 1 16 Oz. Can Black Beans, rinsed
  • 1 Red Bell Pepper, small dice
  • 2 Tbsp Cilantro
  • 1 Tbsp Olive Oil
  • 1 Tbsp Lime Juice
  • 1 Tsp Honey
  • 1/2 Tsp Salt

Preparation

Step 1

1. Bring 1 inch of water to a boil and add the corn.
2. Cover and steam for 5 minutes, remove and let cool.
3. Cut the corn off the cob and place in a bowl with the remaining ingredients.
4. Stir to combine throughly.
5. Serve.
