Ingredients

  • 1 lb lean ground beef or lamb
  • 1 1/2 c mild picante sauce
  • 1 8oz can tomato sauce
  • 1 T sugar
  • 1/2 t ground allspice
  • 1/2 t ground cinnamon
  • 1/4 t ground nutmeg, divided
  • 8 oz uncooked elbow macaroni
  • 3 T butter
  • 3 T all purpose flour
  • 1 1/2 c milk
  • 1/2 t salt
  • 1/4 t black pepper
  • 2 eggs, beaten
  • 1/2 c grated parmesan cheese

Step 1

Preheat oven to 350. Lightly coat 9 inch square baking dish with cooking spray; set aside.

Brown beef in large skillet over med high heat, stirring to break up meat. Drain fat. Add picante sauce, tomato sauce, sugar, allspice, cinnamon and 1/8 t nutmeg. Bring to a boil; reduce heat and simmer, uncovered 10 min, stirring frequently.

Meanwhile, cook macaroni according to package directions, drain. Place in prepared baking dish.

Melt butter in med saucepan over med heat. Add flour; mix until smooth. Add milk, salt, pepper and cook until thickened. Remove from heat. Add about 1/2 cup white sauce to eggs and stir to blend thoroughly. Add egg mixture to remaining white sauce in saucepan. Stir in Parmensan cheese.

Stir about 1/2 cup white sauce into macaroni; toss to coat completely. Spread meat sauce over macaroni. Top with remaining white sauce. Sprinkle with remaining 1/8 t nutmeg. Bake uncovered for 30-40 min or until knife in middle comes out clean. Let stand for 15 min before serving.
