SALMON****Tossed Salad with Smoked Salmon and Capers

Ingredients
- 2 cups mixed baby lettuce/arugula blend
- 2 tbsp. thinly sliced red onion or shallot
- 1/4 cup thinly sliced cucumbers, cut in half-moon shapes
- 2 tbsp. capers
- 2 oz. thinly sliced smoked salmon
- 1 1/2 tbsp. preserved lemon dressing (Mediterranean Fresh)
- 2 tbsp. olive oil croutons
- salt, pepper and fresh or dried dill, to taste
- 1 hard boiled egg, chopped (not in calorie count)
Preparation
Step 1
* Toss greens, croutons and cucumber with dressing and plate. Top with shallots, capers, salmon, salt, pepper and dill, to taste.
