Spicy Southwestern Oven Fried Chicken

Ingredients

  • 3 slices white bread, cut into 1" pieces
  • 3 tablespoons cilantro leaves, fresh
  • 2 tablespoons cornmeal, yellow
  • 2 tablespoons pine nuts
  • 2 cloves garlic, large
  • 1 1/2 teaspoons cumin, ground
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 pinch cloves, ground
  • 2 teaspoons egg whites
  • 2 tablespoons Dijon mustard
  • 1 tablespoon water
  • 2 teaspoons honey
  • 4 each chicken thighs, skin and fat removed
  • 4 each chicken drumsticks, skin and fat removed
  • salt
  • pepper, freshly ground

Preparation

Step 1

Position rack in center of oven and preheat to 400. Grease jelly roll pan. STEEL KNIFE: Place first 10 ingredients in work bowl. Process until fine crumbs form. Add egg white and mix until crumbs are moist.
Transfer crumb mixture to small shallow plate. Mix mustard, water and honey in small bowl. Brush mixture over chicken pieces. Season lightly with salt and pepper. Dip chicken into crumb mixture to coat with thin layer. Gently pat crumbs in place. Transfer chicken to prepared pan. Bake until crisp and brown, about 40 min. Serve hot.
