Shrimp with grilled vegetables and basmati rice

Ingredients

  • 12 medium raw shrimp with tails on
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 Tbsp of Thai chili sauce
  • 2 zucchini
  • 1 red or yellow pepper
  • 1/2 red onion
  • steak salt and pepper to taste
  • 1 Tbsp of Thai chili sauce
  • 1 Tbsp olive oil
  • 1 cup basmati rice

Preparation

Step 1

1. marinate the shrimp in the olive oil, garlic and thai chili sauce for 1 hour
2. Place the oil, steak salt and pepper and thai chili sauce in a large bowl
3. Cut up the zucchini into 1/2 inch slices and add to the oil mixture
4. Slice up the yellow pepper and red onion and add to zucchini. Let marinate for about 1/2 an hour.
5. Cook basmati rice according to package.
6. On the BBQ, grill the vegetables in a grilling basket. Place the shrimp on the upper rack on top of foil.
7. When shrimp and vegetable are done, serve with basmati rice.
