LEMON PEPPER SHRIMP AND STRAWBERRY SALAD

Ingredients

  • VINAIGRETTE DRESSING:
  • 1/2 CUP LIGHT VEGETABLE OIL
  • 1 TEASPOON LEMON JUICE
  • 1/2 CUP STRAWBERRIES
  • 2 TEASPOON OF POPPY SEEDS
  • DASH OF LEMON PEPPER, SUGAR, SALT AND PEPPER.
  • SALAD:
  • 8 JUMBO SHRIMP SHELLED AND DEVEINED
  • 3/4 TEASPOON LEMON PEPPER
  • 2-1/2 CUPS MIXED GREENS, TORN
  • 1/2 PINT STRAWBERRIES, HALVED
  • JUICE OF HALF A LEMON

Preparation

Step 1

COMBINE OIL, 1 TEASPOON OF LEMON JUICE, 1/2 CUP STRAWBERRIES, DASH OF LEMON PEPPER, SUGAR, SALT AND PEPPER IN A BLENDER. BLEND WELL. ADD POPPYSEEDS.
SPRINKLE SHRIMP WITH JUICE OF HALF A LEMON AND 3/4 TEASPOON OF LEMON PEPPER, SALT AND PEPPER. TOSS WELL. IN A HOT SAUTE' PAN, COAT BOTTOM WITH A THIN COAT OF OLIVE OIL AND SAUTE' SHRIMP UNTIL PINK ON BOTH SIDES AND HEATED THROUGH. TOSS TORN GREENS WITH DRESSING. ADD SHRIMP AND TOSS ONCE AGAIN. GARNISH WITH HALVED STRAWBERRIES AND ADDITIONAL VINAIGRETTE.
