Michelle's Southwest White Chili

Ingredients

  • 1 Tbs. olive oil
  • 1 1/2 lb. chicken breasts, cubed or shredded
  • 2 medium chopped onions
  • 2 green onions, sliced
  • 1 4 oz. can green chilies
  • 1 cup chicken broth
  • 1 can cannellini beans, drained and rinsed
  • 1 tsp. garlic powder
  • 1 tsp. cumin
  • 1 Tbs. oregano
  • 1/2 tsp. cilantro
  • 1/2 tsp. ground red pepper

Preparation

Step 1

Heat oil in dutch oven, add chicken and onions and cook until done., about 4 to 5 minutes. Add the remaining ingredients, except beans. Cook uncovered 15 minutes. Add beans, cooking until just heated through. Serve topped with shredded Monterey jack cheese. I added and extra can of drained beans.

(1 1/2 lb. chicken is about 4 split breats)

Michelle likes her chicken shredded instead of cubed.
