Ingredients

  • 1 cup uncooked sm pasta shells
  • 1 lb ground turkey
  • 2 med onions, chopped
  • 2 cloves garlic, minced
  • 3 14.5-oz. cans chicken broth
  • 2 15-oz. cans white kidney beans or cannellini beans, rinsed and drained
  • 2 cans 14.5-oz. Italian stewed tomatoes
  • 2 tsp. dried oregano
  • 2 tsp. dried basil
  • 1 tsp. fennel seed, crushed
  • 1 tsp. pepper
  • 1/2 tsp. salt
  • 1/4 tsp. crushed red pepper (pinch more)

Preparation

Step 1

Cook pasta according to package directions. I used 2 cups meduim pasta shells, instead of small. Meanwhile, in a large soup kettle, cook the turkey, onions and garlic over medium heat until meat is no longer pink; drain. Stir in the broth, beans, tomatoes and seasonings. Bring to a boil. Reduce heat and simmer uncovered, for 10 minutes

Drain pasta and add to the soup. Cook 5 minutes longer or until heated through.
