Italian Sausage and Peppers

Ingredients

  • 3 pounds Italian Sausage, cut into 3/4 inch slices
  • 4 medium green peppers, cut into thin strips
  • 1 medium onion, quartered, thinly sliced
  • 1 Tbs butter or stick of margarine
  • 1 Tbs olive oil
  • 3 Tbs chicken broth
  • 6 plum tomatoes, coarsely chopped
  • 1 Tbs minced parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp lemon juice

Preparation

Step 1

In a Dutch Oven, cook the sausage over medium heat until no longer pink; drain. Add the remaining ingredients. Cover and cook for 30 minutes or until vegetables are tender, stirring occasionally. Serve with slotted spoon.
