This recipe tastes soooo good. It fills you up big time.
This meal broken up into weight watcher's points comes out to be 3.75pts per serving. That is hella good considering that the whole batch is 15pts, so if you want to make this ahead of time and eat some for lunch and dinner it still gives you room for snacks. By adding the bean sprouts it makes it even more filling. You can take one serving of this baby and stuff if into a half pita and I can assure you it will hit the spot (and fill it).

Ingredients

  • Optional:
  • 1 Tablespoon BUTTER
  • 1 Tablespoon EVOO
  • 1 Medium ONION -half slices-
  • 1 Breast of ROTISSERI CHICKEN (store bought)
  • 3-4 Extra Large MUSHROOMS (use more if small mushrooms)-slices-
  • 2 Handfulls of Fresh SPINACH
  • 1 Teaspoon KOSHER SALT
  • 1 Teaspoon GARLIC POWDER
  • 2-3 Whole leaves of ICEBURG LETTUCE OR BIBB LETTUCE
  • Bean Sprouts

Preparation

Step 1

1. Heat up saute pan on Med/Med-High heat.

2. Add EVOO and Butter until melted.

3. Increase heat to Hight and quickly add sliced onions. Saute them for about 1-2 minutes. Then lower heat to Med-High.

4. Add cubbed/shredded Chicken breast to cooking onions.

OPTIONAL: Add bean sprouts.

5. Cook until onions are now traslucent.

6. Add Sliced mushrooms. Saute for about 1 min.

7. Add Fresh Spinach.

8. Add Salt and Garlic Powder. Adding more if needed to taste.

9. Spoon in Saute Mixture into lettuce leaves and roll up or leave as lettuce cups.
