Orange Turkey Stir Fry

Ingredients
- 2 navel oranges
- 1 Tbsp vegetable oil
- One 1-lb turkey tenderloin, cut into bite-sized strips
- 1 red pepper, cut in broad strips
- 8 oz snow peas, strings removed
- 1 bunch scallions, cut into 1-in. diagonal pieces
- 1/2 cup stir-fry sauce
- 1 1/2 cups pineapple chunks (with juice)
- Serve with: cashews and rice

Preparation
Step 1
1. Grate 1 tsp orange zest. Slice off peel and pith; cut orange segments.
2. Heat 1 tsp oil in large nonstick skillet over medium-high heat. Add half of turkey and stir-fry 2 minutes, or until browned; remove to a plate. Repeat with 1 tsp oil and remaining turkey.
3. Add 1 tsp oil and the pepper strips to skillet. Sauté 3 to 4 minutes. Add snow peas; reduce heat to medium. Stir-fry 1 to 2 minutes until peas are crisp-tender. Add scallions, sauce and zest. Simmer; stir in turkey and pineapple. Cook 1 minute. Top with oranges and cashews. Serve with rice
