Ingredients
- approx. 15 graham crackers, or enough to fill the bottom of pan
- 1 c. unsalted butter
- 1 c. light brown sugar
- 12 oz. chocolate chips
- 1/8 tsp. vanilla (optional)
Preparation
Step 1
Preheat oven to 400ºF. Line a 9 x 13 inch baking pan with aluminum foil and spray with non-stick cooking spray. Spread graham crackers evenly on top of aluminum foil. On medium heat, slowly combine butter and brown sugar until it boils. Stir constantly for 3-4 minutes until mixture becomes frothy and sugar is completely dissolved. Spread sugar mixture evenly over crackers with a spatula, knife, cake spreader, or back of spoon – whatever is within reach. Bake at 400°F for 5 minutes.
While toffee sugar mixture is in the oven, melt 12 oz of chocolate chips in a microwave for 2-3 minutes. Take chocolate out after every minute to stir. Be careful not to burn. Spread melted chocolate over crackers. Cool. Refrigerate for a minimum of 3 hours or overnight.* OR if you don’t have a microwave…
After removing crackers from oven, sprinkle chocolate chips over sugar and place in oven for 3 more minutes. Spread melted chocolate over crackers. Cool. Refrigerate as above. Break into small pieces & enjoy!
Refrigerate in air tight container
Variations:
Use Saltines or Matzo in lieu of graham crackers. For chocolate, use milk, semi-sweet, or Reese’s peanut butter chips. If using two different types of chips, use a knife to swirl the chocolate into a marble effect.
