Ingredients
- 1 lb Asparagus - cleaned
- 2 tsp Red Wine Vinegar
- 2 Tbs Olive Oil
- 2 Tbs Chives - minced
- 4 Tbs Blue Cheese - crumbled
- White Pepper - freshly ground
Preparation
Step 1
1.) Snap off end of Asparagus spears. Fill Med. skillet w/ 1" H2O & bring to a boil. Add Asparagus in single layer & cook 8 to 10 min. or until tender. Drain well & arrange on a serving plate.
2.) Stir together Vinegar & Oil in Sm. bowl. Add Blue cheese & Chives & mix well. Pour over hot Asparagus. Season to taste w/ plenty of White Pepper. Set aside until tepid, then serve.
