Pork Roast or Medallions

Serve with Cinnamon Couscous & Mango or Peach Chutney

Ingredients

  • 1 small pork roast or pork medallions
  • 1/4 tsp. coarse salt
  • 1 1/4 tsp. pepper
  • 2 tsp. cumin
  • 2 tsp. chili powder

Preparation

Step 1

Combine salt, pepper, cumin and chili powder. Rub mixture over all surfaces of medallions or pork roast. If medallions, broil for 6-8 minutes. Turn once.

Serve with Cinnamon Couscous & Mango or Peach Chutney
