- 3 C water
- 1 C soy sauce
- 1/3 C Brown sugar
- 1/3 cup white sugar
- 1/3 cup kosher salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp blk pepper

Step 1
mix and brine fish 20-24 hours
pat dry and set on counter 1 hour
smoke with preferred wood
at 190 degrees for 1.5 to 2.5 hrs depending on thickness of fish.
