Ingredients
- 2 pieces bacon
- 1 TBSP. butter
- 1 sweet onion, diced
- 2-3 (10 oz.) pkgs. frozen yellow corn, thawed
- 2 eggs
- 2 c. milk
- 1/4 c. sugar or more
- salt and pepper to taste
Preparation
Step 1
Fry bacon until crisp. Remve bacon. Pour off all but 1 TBSP. bacon fat. Add butter.
To the hot fat, add onion. Stir-fry onion until tender, not browned. Dump corn on onions and fat.
Beat eggs with milk and sugar. Add salt and pepper. Mix eggs and milk with the corn, onions, and fat.
Bake at 325 degrees for 1 1/2 hours or until knife stuck in middle comes out clean.
Allow pudding to set for 10 minutes before serving.
