Ingredients

  • 1 to 2 tablespoons peeled and grated fresh ginger
  • 3 gloves garlic, smashed and pasted with salt
  • 1/2 large shallot, thinly sliced into half moons
  • kosher salt and pepper
  • 1/4 cup chicken stock
  • 2 to 3 tablespoons rice vinegar
  • 2 to 3 tablespoons soy sauce
  • 2 to 3 teaspooons sambal
  • pinch sugar
  • 8 ounces lo mein noodles, cooked
  • 1/4 cup thinly sliced scallions
  • 1 to 2 tablespoons chopped cilantro
  • juice of 1 lime

Step 1

Add 2-3 tablespoons canola oil to a large saute pan. Add giner, garlic and shallots, and turn the heat to medium to flavor. Cook on medium heat 3 to 5 minutes until fragrant and soft. Strain the oil and set aside. Reserve all. Add chicken stock, rice vinegar, soy sauce and sambal. Toss to combine. Add a pinch of sugar to help balance flavor. Add the lo mein along with ginger, shallots, garlic mixture and toss to combine. Allow to heat for 1-2 minutes. Add the scallion greens and cilantro. Finish with a squeeze of lime.
