Ingredients
- 3 Tbsp. extra virgin olive oil
- 1 small organic cucumber, peeled and cut into chunks
- 3 stalks organic celery, washed cut into chunks, no leaves
- 1 c. organic tomato juice
- 2 Tbsp. organic apple cider vinegar
- 2 Tbsp. organic sugar
- 1 Tbsp. organic minced onions
- Salt, pepper and organic garlic powder to taste
- 6 large organic farmers market heirloom tomatoes, stem area removed. Cut into quarters
- 2 organic avocados, seed removed, peeled and chunked
- 1 organic lime cut into quarters
- Ghost pepper salt
Preparation
Step 1
1. Put all ingredients except into avocados, lime and ghost pepper salt into a blender, food processor or Vitamix. Chop for 1 minute until chunky.
2. Put in large ceramic or glass serving bowl and refrigerate for at least 3 hours.
3. Serve with avocado, lime and ghost pepper salt.
