Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 1 small organic cucumber, peeled and cut into chunks
  • 3 stalks organic celery, washed cut into chunks, no leaves
  • 1 c. organic tomato juice
  • 2 Tbsp. organic apple cider vinegar
  • 2 Tbsp. organic sugar
  • 1 Tbsp. organic minced onions
  • Salt, pepper and organic garlic powder to taste
  • 6 large organic farmers market heirloom tomatoes, stem area removed. Cut into quarters
  • 2 organic avocados, seed removed, peeled and chunked
  • 1 organic lime cut into quarters
  • Ghost pepper salt

Preparation

Step 1

1. Put all ingredients except into avocados, lime and ghost pepper salt into a blender, food processor or Vitamix. Chop for 1 minute until chunky.
2. Put in large ceramic or glass serving bowl and refrigerate for at least 3 hours.
3. Serve with avocado, lime and ghost pepper salt.
