Marilyn Davison's Mexican Meat Loaf

Ingredients

  • 2 pounds ground meat
  • 1 cup medium saltine crackers, crushed
  • 2 beaten eggs
  • 1 cup dairy sour cream
  • 1/2 cup chopped green chilies
  • 2 green onions, slice
  • 1 teaspoon salt
  • fresh ground pepper
  • dash Tabasco
  • 1 - 2 garlic cloves, crushed

Preparation

Step 1

In a mixing bowl, combine eggs, sour cream, chilies, onions, salt, pepper, Tabasco and garlic. Combine well.

Add crushed crackers and mix well.

Thoroughly mix in the ground meat.

Place the mixture in a loaf pan and bake in 350° oven for 1 1/2 hours. Remove from oven, let stand 10 minutes, drain excess fat. Transfer meat to platter and serve.

Cooks notes: You can add chopped red chilies, chopped red peppers, chili powder or other ingredients if desired. A small amount of chopped cilantro is also good.

"I usually form this into small ovals and bake on a rimmed cookie sheet until cooked through and nicely browned."
