Ingredients

  • glaze:
  • 1 box yellow cake mix ( no pudding in mix)
  • 1 small box instant pudding mix
  • 4 large eggs
  • 3/4 cup veg oil
  • 4 cups powdered sugar
  • 1/3 cup fresh lemon juice
  • 2 lemons zested
  • 3 tab veg. Oil
  • 3 tab. Water

Preparation

Step 1

Pre heat oven. Spray miniature muffin tins with Pam.
Combine cake mix, pudding mix, eggs, oil, and blend well.
Pour small amount into muffin tins filling only ½ full. Bake 12 mins.
Turn out on dish towel.
To make glaze, sift the sugar into a mixing bowl, add lemon juice,zest oil and3Tab. Water mix with a spoon until smooth.
Dip the hot cupcakes into the glaze coating completely. Place on wire rack with wax paper underneath to catch the drips.Let the glaze set thoroughly about 1 hour before storing in containers with tight fitting lid..
