Catalan Gazpacho

This delicious soup is served cold, will make your taste buds happy and gives you a huge veggie serving for next to no calories! Try it as an entree in summer with vegetables from your garden!

Ingredients
- 1/3 Cucumber (peeled) and seeded
- 1/2 Onions, raw,
- 2 Red Ripe Tomatoes,
- 1 large Yellow or green Bell Pepper,
- 1/4 C. Cider Vinegar,
- 1 tsp. Olive Oil, p
- Pepper, black, 1 dash
- Salt, 3 dash
- 1 C. Water,
- Garlic, 1 clove
Preparation
Step 1
- Peel and seed the cucumber
- Skin the tomatoes by first cutting a little cross in their skin and then dipping them in boiling water for half a minute. Skin should come of easily.
- Put everything in a blander and mix to a smooth consistency.
- Do not water it down too much!
Adjust taste a little to your liking with following options: Tabasco sauce, more Garlic, cantaloupe melon pieces, apple pieces, more vinegar.... go creative..
