Fiesta Meatloaf

A spicy variation of meatloaf, for folks wanting a little bit of kick - you can substitute bread crumbs or even crushed chips for the oats. I chop up the oats a bit in a blender before using (better texture)

Ingredients
- 2 lb. lean ground beef
- 2 C. picante sauce, divided
- 1 C. oats (or bread or cracker crumbs)
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1/2 tsp. garlic powder
- 1/2 c. Monterey Jack cheese
- 4 or 5 chopped green onions
- 3 or 4 green chiles, chopped OR
- 1 4 oz. can chopped green chiles OR
- 1 sm can chopped jalepenos

Preparation
Step 1
Preheat oven to 375 degrees F. Grease a 9 x 5 x 3-inch loaf pan or a 13 x 9 x 2-inch baking pan.
Combine ground beef, 1/2 cup picante sauce, oats, taco seasoning, chiles, about half of the green onions and garlic powder; mix well. Press into prepared baking pan.
Pour remaining 1 1/2 cups picante sauce sauce mixture over top. Sprinckle with cheese and remaining green onions.
Bake for 30 to 35 minutes or until center is no longer pink.
