Ingredients

  • Ground Turkey 1/1/2 lbs - 2lbs
  • milk 1 cup
  • Italian Bread Crumbs 1 cup
  • Egg 2
  • salt 1 t. (Ray does not use)
  • pepper 1/4 t.
  • shredded zucchini 1
  • shredded carrot 1
  • chopped onion saute'ed 1/4 c
  • shredded cheese 10-12 oz. (Harriet = Costco jack and cheddar,
  • Ray = mozzarella)
  • TOPPING: (Ray doubles)
  • Catsup 1/3 C
  • Dijon mustard 1 t.
  • brown sugar 2 t.

Preparation

Step 1

preheat oven to 400 degrees
mix all meatloaf ingredients in a large bowl (best to just use your hands).
transfer to a loaf pan
whisk all topping ingredients together and spread over top of meatloaf.
bake 1 hour or until internal temperature with meat thermometer = 160 degrees. Allow to sit for 10minutes. slice and serve
