Chicken Picata

Ingredients

  • 4 Boneless chicken breasts
  • 1/4 cup flour
  • 1 cup fresh sliced mushrooms
  • 4 tablespoons margerine
  • 2 tablespoons lemon juice
  • 1/4 cup chicken broth or dry white wine
  • 1 Garlic clove

Preparation

Step 1

Pound chicken to 1/2 inch thick. Coat with flour & salt. Brown chicken in 3 tablespoons butter over medium heat about 5 min. or until lightly browned. Remove. Add 1 tablespoon of butter to skillet and cook mushrooms & garlic until tender. Return chicken. Add wine or broth and lemon juice. Simmer for 7-10 minutes.
