Aioli - Garlic Mayonnaise

Ingredients

  • 2 cloves of garlic, peeled
  • 1 egg yolk, lightly beaten at room temperature
  • 3/4 cup olive oil

Preparation

Step 1

Mash the garlic to a smooth paste with a pestle. Take 2/3 of the garlic paste and add 1/2 tsp. room-temperature water, 1/4 tsp. salt and the egg yolk. Stir well. Slowly whisk in the olive oil - a few drops at a time.

As the mixture thickens, begin adding oil in a slow, steady stream. If the aioli becomes too thick, thin it down with a bit of water. After it's been mixed, taste for salt and garlic and adjust accordingly.
