Chicken Paprikash

Ingredients

  • 4 boneless chicken breasts
  • 2 Tblsp oil
  • 1 can chicken broth
  • 1 soup can water
  • 3/4 cup sour cream
  • 3 Tblsp flour
  • paprika, salt & pepper

Preparation

Step 1

Sprinkle chicken breasts with paprika, salt and pepper. Heat oil in heavy skillet over medium-high heat and add chicken. Brown chicken on each side (4 min per side) covered. Add broth and water, reduce heat to medium low and simmer, uncovered, for 1 hour. (If you don't have that much time, just use chicken broth and not water and cut time in half.) Separately, mix flour with a little water to make a smooth, thin paste. Add sour cream to flour mixture and mix. Remove chicken and broth from heat and slowly add sour cream mixture. It works best if you add a little broth to the sour cream first to raise the temperature and keep it from clumping or separating. Serve over wide egg noodles.
