Ingredients

  • 4 tablespoons butter
  • 1 cup Italian breasd crumbs, crushed
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 6 fish fillets (Tilapia or Orange Roughy)

Step 1

Preheat oven to 375º
In a saucepan, melt butter and spread on the bottom of a 13 x 9-inch baking dish.
To crush Italian bread crumbs, place in a plastic bag and use a rolling pin to flatten. Pour contents onto a pie pan. Add cheese and salt & pepper, and blend well.
Dip fish in butter and then in breadcrumb mixture. Return coated fish to pan with butter and bake 15-20 minutes until flakey.
