These are great and the dipping sauce goes well with many different foods as both a dip, a marinade and a drizzled sauce

Ingredients

  • 3 Garlic Cloves
  • -----
  • 1 Tsp Salt
  • -----
  • 1/4 Cup Orange Marmalade
  • 1 Tbsp Honey
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Grapeseed Oil
  • 1/2 Tsp Red Chili Flakes
  • 1 Tsp Ground Coriander
  • Fresh Pepper
  • 1/2 Cup Lemon Juice
  • -----
  • 1/2 Cup Cilantro
  • -----
  • 1 Lb Prawns
  • -----
  • 3 Tbsp Grapeseed Oil

Preparation

Step 1

1) Finely chop garlic, add the salt and then cut and grind into a paste and put into a bowl

2) Add Marmalade, Honey, Soy Sauce, Grapeseed Oil, Red Chili Flakes, Ground Coriander, Pepper and Lemon Juice and mix well with whisk

3) Add finely chopped Cilantro and whisk again

4) Measure out and reserve 1/2 Cup of marinade for dipping sauce

5) Devein and Clean the prawns leaving the tails on and marinade for 30 minutes (not more or else the lemon juice will cook the prawns), tossing periodically

6) Remove from marinade and gently pat them dry

7) Preheat pan on MEDIUM HIGH HEAT and once hot lightly coat the pan with grapeseed oil

8) Cook for about 1 minute per side for medium prawns and adjust depending on size

9) Serve with dipping sauce
