Ingredients

  • (1) 5-10 pound pork butt (smoked or regular)
  • Sometimes called pork shoulder or pork picnic.
  • 1/2 TSP Salt
  • 1/2 TSP Fresh Ground Black Pepper
  • 1/2 cup of worchestershire sauce
  • 6 tbsps of cajun seasoning
  • 1 cup of packed brown sugar
  • 1 cup apple juice

Preparation

Step 1

RINSE PORK BUTT UNDER COLD WATER AND PAT DRY WITH PAPER TOWELS. SPRINKLE WITH SALT AND PEPPER, DOUSE WITH WORCESTERSHIRE AND RUB WITH CAJUN SEASONING. ONCE THE PORK IS EVENLY COVERED WITH THE SPICES, COAT THE PORKER WITH BROWN SUGAR.
PREHEAT OVEN TO 450 DEGREES. PLACE PORK ON A RACK INSIDE A PAN WITH A LIDE AND POUR APPLE JUICE AROUND PORK.
COOK 1 HOUR AT 450 UNCOVERED THEN:
COVER AND REDUCE HEAT TO 225
BAKE AT 225 FOR 6 TO 8 HOURS.

REMOVE PORK FROM PAN AND ALLOW PORK TO FULLY COOL BEFORE SHREDDING. COVER WITH BBQ SAUCE RECIPE.
