Steamed Rice

  • 1 cup long-grain white rice
  • 2 1/2 cups water divided

Step 1

Combine rice and 1 1/2 cups water in metal bowl. (Use a 5-cup capacity bowl, 3 inches high or less, which will fit loosely into a 4- or 6-quart pressure cooker.) Place 1 cup water, cooking rack or steamer basket, and bowl in cooker.

Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook 5 minutes, at 15 pounds pressure, with pressure regulator rocking slowly. Let pressure drop of its own accord. Open pressure cooker and allow rice to steam, uncovered, 5 minutes.

This recipe yields 4 to 6 servings.
