POTATO SALAD - CUTCO KITCHEN

Ingredients

  • 4 4 4 pounds diced cooked tomatoes (7-8 medium)
  • 6 6 4 2 to eggs, chop 4 for the salad, reserve 2 to slice and use as a garnish
  • 3/4 3/4 3/4 cup chopped celery
  • 1/2 1/2 1/2 cup shredded carrot
  • 1/4 1/4 1/4 cup thinly sliced green onions
  • 1-1/4 1-1/4 1-1/4 cups mayonnaise
  • 1/4 1/4 1/4 cup vinegar
  • 1 1 1 Tbsp prepared mustard
  • 1 1 1 tsp salt
  • 1/2 1/2 1/2 tsp paprika
  • pinch A pinch of black pepper

Preparation

Step 1

Put diced potatoes, chopped eggs, celery, carrot and onions in a large bowl. Whisk the mayonnaise, vinegar, mustard, salt and paprika together until smooth. Pour over the potato mixture and mix. Garnish with the sliced eggs and sprinkle with additional paprika. Chill before serving.

• The amount of mayo in the dressing makes the salad quite creamy. If you prefer a dryer salad, cut the mayo to 1 cup.
