Pasta with Arugula

Ingredients
- 3 pepper, yellow, red and green, seeded and chopped
- 3 cloves garlic, chopped
- 12 ripe cherry tomatoes, quartered
- 1/4 cup plus 2 tbsp. olive oil
- 1 bunch arugula, washed and dried
- 1 lb garganelli pasta, or penne
- pepper
- salt
- 1/4 cup plus 2 tbsp. olive oil

Preparation
Step 1
In a large saute pan heat olive oil. Add peppers and garlic. Saute over medium heat 8-10 min or until tender. Add tomatoes and cook 2 min until slightly melted. Add arugula and cook 1 min. Cook pasta according to package directions, drain and palace in large serving bowl. Spoon vegetable mixture over pasta. Toss well and add salt and pepper to taste. Serve at room temp.
