Scalloped Potatoes

Ingredients
- 4 TBS butter
- 1 Small onion, finely chopped
- 3 TBS flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 1/2 cups milk (I use 2 cups milk, 1/2 cup heavy cream)
- 6 medium potatoes, peeled or unpeeled, thinly sliced

Step 1
Melt 3 TBS butter over medium heat, add onion and cook about 2 minutes until onion is tender. Stir in flour, salt and pepper. Cook, stirring constantly until smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly and boil 1 minute--still stirring.
Spread potatoes in greased (shotening or cooking spray) 2 qt. casserole. Pour sauce over potatoes. Cut remaining 1 TBS butter into small pieces and spread on top.
Cover and bake at 350 degrees for 30 minutes. Uncover and bake for 1 hour to 1 hour 10 minutes until potatoes are tender. Let stand for 5-10 minutes before serving to allow sauce to thicken.
