Quick Coffee Cake

  • For Glaze:
  • 1 heaping tablespoon of butter
  • 1/2 cup plus 3 Tbsp sugar, divided
  • 1 egg
  • 1/2 cup milk
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups AP flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 cup confectioners' sugar
  • Start with 3 Tbsp water, add more to achieve glaze consistency

Preparation

Step 1

Preheat oven to 350.

Melt butter. Beat egg and sugar together. Beat in butter. Add milk and vanilla and beat hard. Mix together cinnamon and 3 tbsp sugar in small bowl and set aside. Mix together flour, baking powder and salt in a large bowl. Add flour mixture into egg, sugar and butter mixture, blend to combine but do not overbeat.

Pour into greased and floured pan. (spray is fine also) Add cinnamon sugar mixture and swirl into the batter with a knife or spatula. Bake 30 minutes or so just until toothpick inserted in center comes out clean. Do not overbake or the cake will be dry.

Allow cake to cool before adding glaze.
