Oven Roasted Cauliflower with Pine Nuts and Golden Raisins

Ingredients

  • 1 Head Cauliflower
  • Extra Virgin Olive Oil
  • White balsamic Vinegar
  • Salt and Pepper
  • Hand full Golden Raisins
  • Hand Full Pine nuts
  • Parsley, chopped

Preparation

Step 1

Preheat the over to 425. Cut the Cauliflower into florets. Drizzle with oil and vinegar and season with salt and pepper. Roast in the over for 25 minutes, turning the florets half way through.
While the cauliflower is roasting, plump raisins by putting in a microwave safe bowl, covering with water and microwaving on high for 4 minutes.
Toast the pine nuts in a small pan and add the raisins after thoroughly drained with a small amount of olive oil. Cook for about a minute.
When cauliflower is done in the oven, put in a bowl and mix in the pine nuts and raisins. Top with parsley
