SWEET****Coffee Yogurt

01/08/15 - Yummy. I double the recipe, because it was easier. I find 3 to 4 teaspoons to 1/2 cup of yogurt is perfect and doesn't make it too runny. As a treat, a handful of granola thrown in (especially chocolate) is great

Ingredients
- COFFEE CONCENTRATE:
- 1/2 cup brewed espresso or other strong coffee
- 1/4 cup 2% milk
- 1 teaspoon instant espresso powder
- 1/4 cup sugar (I used instant dissolving)
- 1/4 teaspoon vanilla extract
- TO SERVE:
- 1/2 cup 2% greek yogurt
- 2 tablespoons coffee concentrate
Preparation
Step 1
Combine ingredients in a small saucepan. Set over medium-high heat and whisk until sugar completely dissolves. Bring just to a simmer, remove from heat, add vanilla and cool completely.
Transfer to a jar and refrigerate until needed.
To serve, shake the concentrate well. Combine 1/2 cup of yogurt with 2 tablespoons of concentrate and mix well to blend completely.
