Steakhouse Dinner with Spinach

Steak with delicious blue-cheese, cream sauce and wilted spinach

Ingredients
- 2 Boneless Beef Strip Loin Steaks (8z each)
- Sea Salt
- Pepper
- -----
- 2 tsp Olive Oil
- 2 tsp Unsalted Butter
- -----
- 1 Large Shallot, thinly sliced
- -----
- 1/2 Cup Heavy Cream
- 2 Tbsp Blue Cheese
- -----
- Baby Spinach
- -----
- 1 Tbsp Lemon Juice
Preparation
Step 1
1) Bring steak to room temperature and 10-15 minutes before cooking pat dray and add salt and pepper
2) Heat oil and butter over MEDIUM HEAT until foam subsides then cook steak.
3) Flip steak every minute for about 9 minutes for Medium. Once done transfer to elevated rack and cover loosely with foil.
4) Add shallot to skillet and cook, stirring until softened, about 2 to 3 minutes.
5) Add cream and blue cheese and cook, scraping up all the brown bits from the pan for under a minute
6) Add spinach and turn with tongs until wilted, about 2 minutes then add lemon juice, salt and pepper
7) Serve steak and spinach with pan sauce drizzled over steak
