Cauliflower Cheese Soup

Ingredients

  • 1 medium head or 4 cups small pieces of Cauliflower
  • 1 cup water
  • 4 cups milk
  • 1/3 cup margarine or butter
  • 1/2 cup unsifted flower
  • 4 tsp Instant Chicken Bouillon
  • 6 slices American cheese process cut into pieces (Velveeta??)

Preparation

Step 1

In 2 qt pyrex, microwave cauliflower in water covers on high for 12-14 min until tender. Reserve 1 cup cooked cauliflower. In a blender, puree remaining cauliflower & milk.

In 2 qt Pyrex melt margarine 1 minute. Stir in flour. Add remaining 3 cups milk, bouillon & pureed cauliflower. Cook on 50% power 8-10 min. or until slightly thickened, stirring every 2 min. Stir in cheese& remaining cauliflower; cook on 50% power 4-5 min or until hot & cheese food melts.
