Ingredients

  • 3 Fennel Bulbs
  • 1 C Fresh Bread Crumbs
  • 1 oz Pine Nuts
  • 1/4 C Raisins
  • 1 tsp Chopped Fresh Thyme
  • 1/4 C Grated Parmesan Cheese
  • 1/4 C Olive Oil
  • Salt and Pepper to taste
  • Fennel Fronds for garnish

Preparation

Step 1

Preheat oven to 325F. Trim fennel, discarding outer leaves if necessary. Quarter bulbs, slice thin. Boil in salted water for 3 minutes, drain well. Arrange in single layer in oiled gratin dish. Mix remaining ingredients and sprinkle evenly over the fennel, pushing the raisins down. Bake 20 to 30 minutes until golden brown. Garnish with reserved fennel fronds and serve.
