Ingredients
- 2 cups all-purpose flour
- 1/3 cup sugar
- 2 eggs
- 3/4 cup whole milk
- 1/2 cup shredded coconut
- 1 cup diced peaches
- 1 cup pineapple tidbits
- 1/2 cup pecan pieces (any nuts will work)
- 1/4 cup juice from any fruit
- 1/4 cup melted butter
- 1/2 teaspoon vanilla
- 1 teaspoon salt (optional)
- 1 teaspoon baking powder
- For Topping
- 1/4 cup light brown sugar
- 1/4 cup white sugar
- 1/4 cup finely chopped nuts
Preparation
Step 1
Preheat oven to 375 degrees F. Combine flour, baking powder, sugar and salt. In a small bowl, beat eggs, milk, reserved frit juice, butter and vanilla. Add to flour mixture and stir just until batter is moist. Gently stir in shredded coconut, diced peaches, pineaple tidbits and nuts.
Combine topping ingredients in a small bowl.
Grease and flour a 12 or 6 cup muffin tin or use paper liners (recommended). Fill baking cups 2/3 full. Spinkle each with some of the topping. Bake appriximately 20 minutes. Remove and cool on wire racks. Makes two dozen muffins.
