Muffins, Pina Colada Muffins Bed and Breakfast Book

Ingredients

  • 1 box yellow or butter cke mix
  • 1 teaspoon pure coconut extract
  • 1 teaspoon pure rum extract
  • 1 cup flaked coconut
  • 1 cup flaked
  • 1/2 to 1 cup chopped nuts
  • 1 8-ounce cn crushed poineapple, undrained

Preparation

Step 1

Preheat oven to 350 degrees. Prepare cake batter according to package directions. Add remaining ingredients and mix for 1 minutes (do not overbeat).
Grease a 6-or 12-cup muffin pan. Fill muffin cups 3/4 full and bke for 15 to 20 minutes or until golden. Remove from oven, and let cool on wire racks. Makes 2 dozen muffins.
