Ingredients
- Filling:
- 3 large Granny Smith apples, peeled, quartered, and sliced
- 1 1/4 cups fresh cranberries
- 1/3 cup raisins
- 1/2 teaspoon orange or lemon zest (optional)
- 1/3 to 1/2 cup organic sugar
- 1/4 cup whole wheat pastry flour
- 1/2 teaspoon ground cinnamon
- Topping:
- 3/4 cup old fashioned rolled oats
- 1/2 cup whole wheat pastry flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/2 cup dairy-free margarine
Preparation

Preheat oven to 350 degrees and have ready an 8-inch square baking dish.
TO MAKE THE FILLING,
combine the apples, cranberries, raisins, and orange zest in a large bowl and toss together.
In a medium bowl combine the organic sugar, flour, and cinnamon, mix well, and add to the apple mixture. Mix thoroughly until well combined and spoon the fruits into the baking, dish. Set aside and prepare the topping.
TO MAKE THE TOPPING,
combine the rolled oats, flour, brown sugar, and cinnamon in a medium bowl and mix well. Add the margarine and use a pastry blender or your hands to work it into the topping mixture.
Sprinkle the topping loosely over the apple mixture, forming a crumbly, uneven, lumpy topping. Bake uncovered for 50 to 60 minutes, or until the apples are soft when gently pierced with a fork. Cool 15 minutes and serve warm or cool completely and refrigerate until ready to serve.
