This is delicious! Alex and I made it one night and it was an instant hit. I lost the recipe right before we were going to make it and we couldn't find it anywhere. Alex had to finally go on the Internet to find the recipe. We never did find it. We call this our "Lost" Strawberry Pie! Enjoy!

Ingredients

  • Crust:
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup Crisco Oil
  • 2 tablespoons milk
  • 2 tablespoons sugar
  • Filling:
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons light corn syrup
  • 1 cup water
  • 3 tablespoons strawberry gelatin (powder)
  • 1 1/2 quarts strawberries, sliced

Preparation

Step 1

Preheat oven to 400 degrees.

To make the crust:
Stir together the flour, salt, oil, milk and sugar until you have a smooth dough. Press the dough into a 9-inch pie pan. Bake until golden, about 12 minutes. Let cool completely.

To make the filling:
Combine the sugar, cornstarch, corn syrup and water in a saucepan and bring to a boil. Boil until thick, about 5 minutes. Remove from heat. Stir in the gelatin and cool until lukewarm. Add strawberries and pour into the cooled crust.

Refrigerate for 2 hours before serving.
