Ingredients
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 1/2 cup diced red, yellow or green bell pepper
- 1 tbsp butter
- 12 cups vegetable stock
- 1 1/2 cup stewed tomatoes
- 1 cup picante sauce
- 3/4 cup taco seasoning
- 6-6 " tortillas, shredded, plus extra for garnish
- 1 cup shredded white cheddar or asadero cheese
- 1 1/4 cup milk
- chopped fresh cilantro for garnish
Preparation
Step 1
In large saucepan over high heat, saute onion, carrot, celery and bell pepper in butter until tender. add vegetable stock and bring to boil. Add stewed tomatoes, picante sauce, taco seasoning and tortillas. Continue boiling until tortillas are fully incorporated into soup. reduce heat and add cheese. Simmer 20 minutes or until cheese is melted and mixed well in soup. Add milk and simmer an additional 15 minutes. If thicker soup is desired, add more tortillas. Garnish each serving with cheese, tortilla shreds and cilantro. serve.
