Ingredients
- 3 1/2-4 cups shredded Mexican cheese blend
- 1 can refried beans
- 5 10" tortillas
- 1/2 cup Sour Cream
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 teaspoon chili powder
- 3 cups cooked chicken (chopped)
- 2 cups salsa
- 1 cup corn
- shredded lettuce (for garnish)
- sour cream (for garnish)
Preparation
Step 1
Preheat oven to 400
In a bowl stir together chicken, chili powder, garlic, salt, and sour cream. Set aside.
In a 10" springform pan (or cake pan) layer 2 tortillas. Spread 1/2 the can of beans on top and sprinkle evenly with 1 1/4 cup cheese. Layer another tortilla topped with 3/4 cup salsa, 1/2 cup corn, and 1 1/2 cup chicken. Repeat layers one more time. Top with a tortilla, 1/3 cup salsa, and 1- 1 1/2 cups cheese. Cover with foil and bake 20 minutes. Remove foil and bake 5 more minutes or until all cheese is melted.
Top with lettuce and sour cream
