Ingredients
- 4 c. whole wheat flour
- 2 c. white flour
- 2 c. water (1 cold, 1 hot)
- 1/2 c. honey
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/3 c. corn oil or melted shortening

Step 1
Preheat oven to 350 degrees. Mix dry ingredients in large bowl. With fork add 1/2 cup of cold water to dry mixture. When blended, add other 1/2 cup cold water. Mix and set aside.
In another bowl, mix well the honey, corn oil (or shortening) and 1 cup hot tap water. Gradually add this to the first mixture. When mixed well, you will have a sticky dough.
Put the dough on a lightly floured counter, knead well (add small amounts of flour as needed to keep dough from sticking) for five minutes.
Divide the dough into portions about the size of baseballs. Roll these out so that they are 1/4 in. thick and about 6 inches round (trim as needed). Put the loaves on an ungreased cookie sheet. Use a sharp knife to score the tops so that the loaves can be broken into bite size pieces (like illustration below).
Bake for approximately 15 minutes. Allow bread to cool, then place in plastic bags or wrap with plastic wrap. If bread is made more than a couple of days in advance, it should be frozen.
