Raspberry Chicken With Semi Demi Glace

Ingredients
- 1-2 Tbs oil
- 2 chickens cut into eights(or 8 bottoms)
- 5-6 shallots,diced
- 3 cloves of garlic,finely diced
- 1/2 cup ketchup
- 1 cup white wine
- 1/2 cup seedless raspberry jam

Step 1
Heat oil in a low,wide pot or frying pan. Add chicken pieces and sear on high until they turn golden and crispy. Turn over and do the same to the rest of the chicken pieces. Transfer to a roastingpan. Add shallts and garlic to the sizzling oil in the pot. Saute until golden brown. Add ketchup,wine,and jam and cook on a med-low flame until smooth . while cooking,stir with a spoon to scrape up the bits and pieces stuck to the pot. Meanwhile preheat oven to 350. Pour sauce over chicken and bake,covered for 1 1/2 hrs,uncovered for 1/2 hr.
